White Chocolate Chip Cookie Cake was the perfect way to enjoy birthday week at our house.

Last week we celebrated two birthday: my 40th and C’s 8th.While I love my birthday, I find that I spend most of the time planning for C’s birthday.  We did have a perfect day visiting Valley Forge and having a family dinner out, which is all I really wanted.  Plus, I had C’s Wild Animal Party to plan for his party which was a few days after the big day.

But first, cake.  White Chocolate Chip Cookie Cake to be exact.  I’m not sure how this idea entered his head but C’s been talking about having a Cookie Cake for his cake of choice. Since my white chocolate chip cookies went over so well recently, I decided I would take that one little delicious tweak and apply it to his birthday cake.

White Chocolate Chip Cookie Cake (adapted from Sally’s Baking Addiction)

Ingredients

  • 3/4 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1 large egg + 1 egg yolk
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 package white chocolate chips

Directions

  1. Preheat oven to 350°F.
  2. In a large bowl beat butter until creamy.
  3. Add the brown sugar and beat until creamy.
  4. Mix in egg, egg yolk, and vanilla thoroughly.
  5. In a separate bowl, combine flour, cornstarch, baking soda and salt. Slowly mix wet ingredients until combined.
  6. Add white chocolate chips and hand mix until evenly blended.
    Spray a 9-inch pan with nonstick spray.
  7. Spray a 9-inch pan with nonstick spray. Press the cookie dough evenly into the pan. Bake for 25 minutes. The cake should be lightly golden brown.
  8. Remove from oven and cool on a wire rack.  Cool completely before icing.
