Last year seems like a blur.  It was one of those years that was OK, but it wasn’t focused on family and friends as much as it should have been nor was it as memorable as I would have liked it to be – for any of us.  That’s all changing this year.  This is the year of family fun and making memories with friends.  One of our new goals is to start getting together with our friends more often. Our weekends will be about being together in the moment.  Sometimes this may be a get together with another family and sometimes it will be just us. Regardless, 2016 is all about family, friends and good times… and we’ve already started with an at-home football viewing party!

Get Cozy

We don’t use our finished basement as often as we should, so for our at-home viewing party we ventured downstairs to enjoy our still-new-to-us room. We put on one of the big games and the boys snuggled in with Daddy on the reclining sofa. Our local football team is out of the running for a big win, but that didn’t stop us from picking sides – opposite sides, of course!  They didn’t even know what team they were rooting for that game, they just decided based on jersey color.  Boys. Always so competitive!

Yummy Food

Of course, no at-home football viewing party is complete with out some yummy food and beverages. I made a stop at Acme to pick up Coca-Cola bottles and RITZ® Crackers. Anyone that knows me knows that I’m a HUGE Coca-Cola fan.  I always have some Coke Zero in my refrigerator to offer guests, but I enjoy original Coca-Cola on special occasions. There is just something about the fizz of a delicious and refreshing Coca-Cola… yum. It was the perfect addition for our viewing party!

Parties at our house have always included RITZ® Crackers with cheese and pepperoni. As a hostess it makes my life easier to have simple snack solutions on hand so that my guests can snack at will during the game, and so that I don’t have to keep running up and down the stairs! This weekend I experimented with a new recipe: Bacon Wrapped Dijon Chicken & Cheese Bites. I knew didn’t want a kabob for this easy appetizer, so I put some shredded cheese and the bacon wrapped chicken bites on top of RITZ® Crackers and voila! Since I wanted to enjoy the game too, I made this recipe ahead of time so all I had to do was reheat it during halftime. It’s the perfect addition to any appetizer table!

Halftime recaps are a bit boring for me, but we had a plan for that – Foosball!  I enjoyed my tasty Coca-Cola watching the guys play a few rounds of foosball. Cbear threw down the challenge insisting he was going to beat his father, and any other adult around, easily.  They may need to create their own foosball bowl, as it seemed they were both vying for the title with competitiveness. Most importantly, though, they had a blast!

Next weekend we have guests visiting for the next big game… and my Bacon Wrapped Dijon Chicken and Cheese bites on RITZ® Crackers, along with several bottles of Coca-Cola, will definitely be on our food table once again!

  • 4 Tbsp. Dijon Mustard
  • 1 Tbsp. Worcestershire sauce
  • 1 (8 oz.) Chicken breast – cut into bite-sized strips or squares (approximately 18 bites)
  • 6 Slices Bacon, cut into thirds
  • Shredded Cheese, Cheddar
  • 18 RITZ® Crackers

Step 1: Mix 3 Tbsp. Dijon Mustard and Worcestershire sauce in a bowl.  Add chicken strips and coat thoroughly. Refrigerate for about an hour.

Step 2: Cut bacon into thirds. Wrap bacon around chicken, securing with a toothpick. Broil for 5 minutes, then turn and broil another 3 minutes. (*Note: at this point, I refrigerated the cooked chicken and bacon to reheat later)

Step 3: Heat oven to 325ºF.  Place RITZ® Crackers on baking sheet and add desired amount of shredded cheese. Remove toothpicks and place bacon wrapped chicken atop cheese.  Place in oven about 5 minutes or until cheese is melted. (Note: if you are reheating this recipe, warm up the chicken and bacon first for about 15 minutes and then follow Step 3)

    4 strips of bacon cut into thirds? 4 X 3 = 12.
    18 pieces of chicken can’t be wrapped by 12 pieces of bacon. the recipe should say 6 strips of bacon, not 4. Other than that it looks delicious.
