Mini Stromboli Appetizer

I love our neighborhood (well, except for that darned fire siren that goes off every.single.day). The neighborhood is in that phase where the original owners from 20 years ago are moving out and new, younger families are moving in. We are lucky enough to be one of six families with children around the 4 or 2 year old age, and there are 4 of us expecting new little ones this fall. It certainly makes the chaos seem manageable when you are with other parents with children in the same age range/stage as you.

We have been trying to have regular get-togethers with our neighbors for the past 18 months or so. It’s nice to know that about 4 times a year we can get our gaggle of kiddo’s together in one place with plenty of toys, have a potluck-type dinner and relax as much as possible!

This past weekend, we did just that and I volunteered to bring an appetizer to the party. I recently tried making my own calzone, and then amended that recipe to be more stromboli-like. Can we just say – I loved the meatball stromboli we made at home. So easy.

For the party, I decided I would work up little mini stromboli’s (think pizza bites) for our appetizer. My first attempt did not work out so well.  I had tried to cut corners and rather than rolling out the dough and cutting it into the size I needed, I tried to bake it in it’s entirety and use a fork to make the cut out impressions prior to baking. It was edible but not presentable. Needless to say, we kept that first batch at home for ourselves.

I tried another approach and it went something like this:

  • 1 tube of Pillsbury Pizza Crust
  • 1 jar of spaghetti sauce (I used Wegman’s Grandpa Sauce)
  • meatballs (I used frozen, so I semi-cooked before using in recipe)
  • pizza cheese

Step 1 – gather ingredients. I used a little bit of flour so that I could roll out the crust a bit more easily.

Step 2 – Cut Meatballs into tiny, bite-sized pieces

Step 3 – Roll out pizza crust. Cut into appropriate appetizer size. Place a teaspoon full of meatballs on to half the of the pieces. Then add pizza cheese.

Step 4 -Place pizza crust square on top of meatball and cheese. Use a fork to press down the sides.

Step 5 – After your prep work, just bake according to the pizza crust instructions. I had ours in the oven for approximately 15 minutes on 400°.

It was a quick appetizer that was a big hit with the kids!
